For cancellations or to change your reservation, please call us or email us a minimum of 48 hours prior to your reservation. We start to make preparations for your menu from N days before you visit. We’d like to treat all of producer’s sentiments, please let us know as soon as possible the cancellation or change of booking is needed. Thank you for your understanding.
The pure products of the earth opens your senses and can take you far away. The freshest oyster takes you to the coasts of Normandy, the fresh sea breeze hitting your face as you taste the salty water coming from the newly opened shell. A cream of milk infused with Hinoki, takes you back to past walks in the Japanese city parks. The glass of wine made of the ripest grapes from the South-African hillsides gives you the feeling of sunshine in your face, like a mouthwatering Chenin reminds you of the misty mornings in the Loire Valley.
The visual aspect of these things are, for us, as important as the sense of smell or the feeling of texture or temperature. We like to surround ourselves with beautiful things, and the way we see things, the experience going through a landscape of flavours, aromas, memories as you do in with a tasting menu, should also appeal as much to your eye. This is why we take great importance in the way we present our dishes.
For the question of wines, and why we choose to serve our clients only natural products, the answer is the same as for why we choose to work with vegetables from small farmers, why we choose our meat from the best growers. We want what we drink, as what we eat, to be a raw expression of the earth. We want our wines to smell of the grapes they are made of, of the soil in which the vines grow, and we want the fingerprints of genuine, hardworking men and women on the bottles we open.
